Super Green Soup

Try this super green soup recipe for a tasty and nutritious way to have your daily veggies!

Serves: 2

You will need:

500ml stock – made by mixing a stock cube of your choice with boiling water.
200 grams zucchini – roughly sliced
100 grams kale – chopped
85 grams broccoli
75 grams peas
Small pack parsley – roughly chopped
Small pack string beans – roughly chopped
2 garlic cloves – sliced
A thumb sized piece of ginger – sliced
½ tsp ground coriander
3cm / 1 inch piece of fresh turmeric – peeled and grated or ½ tsp ground turmeric
Juice of one lime
Pinch of pink Himalayan salt
1 tbsp olive oil


1. Pour the olive oil in to a deep pan, then add the garlic, ginger, coriander, turmeric and salt. Fry on a medium heat for 2 minutes, then add 3 tbsp water to moisten the spices.
2. Add the zucchini, mixing well to ensure all of the spices are coated, and continue cooking for 3 minutes. Add 400ml of the stock and leave to simmer for 3 minutes.
3. Next, add the broccoli, kale, peas, string beans and lime juice along with the rest of the stock. Leave to cook for another 3 to 4 mins until all of the vegetables are soft.
4. Take the pan off the heat and add in the chopped parsley. Pour everything into a blender and blend on high speed until smooth. It will be a pleasant green color, speckled with dark green from the kale. Garnish with lime zest and parsley.
